Brief Story of Don Papa Rum

Stephen Carroll, a former executive at Rémy Cointreau, founded Don Papa. Carroll heard stories about Bacolod having the best sugar cane in the world during a trip there. Until then, rum from the Philippines had been distilled in other parts of the country.

In Negros, the country's sugarcane capital, he established the Bleeding Heart Rum Company to manufacture the rum. Papa Isio, a leader of the Philippine Revolution in the 1890s, inspired Don Papa.

Don Papa made his debut in Bacolod in 2012, followed by Manila later that year. Since then, the brand has expanded into international markets such as the United Kingdom and Spain. In 2017, Don Papa became available in the United States.

Why is Don Papa Rum a great choice?

Don Papa Rum is a premium aged single-island rum made in the Philippines on the foothills of the active volcano Mt. Kanlaon, where the finest sugar cane is milled to produce sweet, rich molasses. Don Papa is overwhelmingly fruity, with tons of orange, some coconut notes, banana, and a tropical hint, unlike most Caribbean rums, which are driven by vanilla notes. 

You can smell how strong the sugar is; it smells sweet and has a distinct candy-like flavor. The palate is pretty much as expected. The candy-coated fruit flavor is still present, with mint, toasted coconut, and a hint of strawberry folded into the orange-dominated body. In the finish, there's a bit of astringency that the sugar can't quite cover up, but given the rush of sweetness that comes before, this rustic character is almost a welcome relief.
